Sushi Koji: Crafting a Unique Sushi Dining Experience

Renowned sushi chef's independence inspires a one-of-a-kind sushi restaurant, Sushi Koji, designed by Ryuji Kojo and Toshihiro Obata of STUDIO MOUN. The 24 m2 space, utilizing natural materials, offers an intimate 8-seat counter where guests can savor sushi while witnessing the chef's artistry.

The design, incorporating ginkgo wood, original Washi, and maple plates dyed by iron mordant, not only minimizes resource waste but also creates a soothing ambiance with solid wood. The use of handmade Washi and solid wood, avoiding industrial products, showcases the meticulous craftsmanship behind the restaurant's creation.

The fan-shaped counter design maximizes seating while creating a seamless transition from the entrance to the dining area, ensuring a serene and immersive dining experience. Completed in December 2022 in Fukuoka city, Japan, Sushi Koji embodies the owner's warm personality and dedication to his craft, offering a truly unique sushi dining experience.
